Celebrate summer with this Caribbean Coconut & Espresso Milkshake – two of my favorite flavors have come together to bring you a creamy, icy treat that’s the perfect dessert to any of your summer get togethers!
If there ever came a time when I had to choose my favorite flavors in the world, I think coffee and coconut would be tied in first place. Both flavors remind me of my home island of the Dominican Republic, where palm trees sway to the warm ocean breeze and where coffee is the first and last thing you have during the day.
While coming up with new milkshake recipes, these two flavors popped into my head and I decided I needed to have this in my life, ASAP! Thus, the Caribbean Coconut & Espresso Milkshake was born! Loaded with dark roasted and brewed espresso and creamy, rich coconut ice cream, this milkshake is unlike anything else you’ve ever tasted!
Milkshakes are the perfect way to cook down on hot days and are a great dessert idea when you want something simple yet impressive. Serve these in cute mason jars with colorful straws and line up a variety of toppings for your guests to sprinkle on. Take the time to make homemade whipped cream (forget the canned stuff!) and add a splash of vanilla extract to it – you’ll taste the difference. Heck, even do what I did and just beat it by hand. You’ll get a delicious treat AND a workout, all at the same time!
Note: Be sure to use great espresso or coffee – using espresso will make for a stronger, more dominant coffee flavor, but if you don’t have an espresso maker, just brew your regular coffee with double the coffee grounds for an extra strong coffee.
Caribbean Coconut & Espresso Milkshake

Ingredients
- 2 cups coconut ice cream
- ½ cup strong brewed dark espresso or coffee
- 1 cup whole milk
- 1 teaspoon coconut extract
- whipped cream to taste
- caramel sauce to taste
- chocolate sprinkles to taste
- toasted coconut to taste
Instructions
- In a blend, mix all the ingredients until smooth.
- Serve into two tall glasses and top with whipped cream, caramel sauce, chocolate sprinkles, and toasted coconut!
