That’s why we’ve teamed up to come up with a bunch of delicious summer recipes featuring New Zealand pears and apples. Today, we’re focusing on recipes using Jazz Apples. We’ve talked about how summer cocktails are one of my favorite recipes to make during the heatwave season and today is like every other day. After working a 14-16 hour shift at the restaurant, nothing feels better than sipping on a chilled cocktail or mocktail on the deck. And since I work/live on property, my fellow cooks are around for the cocktail mixing and shaking. This Apple Basil Mojito was inspired by a drink one of our line cooks, Shauna Shapiro, created late one night. Shauna is what I call a “little bit of this, little bit of that” kind of cook. She tweaks and plays around with ingredients to make the perfect recipe; her salad dressings are outstanding and her babaganoush recipe will soon be gracing the blog as well!
Head into your garden and snip some fresh basil and mint for this recipe – if you’re not lucky enough to have an herb garden, pick up the prettiest herbs you can find at your local store or farmer’s market. The bright freshness of basil and mint are what make this drink spectacular.

Apple Basil Mojito

Ingredients
- 2 large fresh basil leaves
- 2 large fresh mint leaves
- 1 ounce St. Germain elderflower liqueur
- 4 ounces freshly juiced Jazz Apple juice
- 1 ounce spiced rum
- crushed ice to taste
Instructions
- In a tall glass, muddle the basil and mint leaves.
- Add the St. Germain and stir in the apple juice.
- Mix in the rum and shake with crushed ice.
- Serve chilled and cheers!
