During the winter months, we naturally crave warm meals. Both warm in temperature and in ingredients, our bodies just want to warm up! Honestly, having a well stocked pantry and freezer is what gets us through the winter months here in New England. And these Crab Claws in Curry Sauce are just the example for what a well stocked kitchen can create!

Frozen seafood is something we like to stock up because it makes deciding what to make for dinner a quick and easy task. It thaws quicker than most proteins and need very little to become a great meal. Seared scallops, sautéed shrimp in brown butter, curies crab claws…you get my drift. When we received these Snow Crab Cocktail Claws from Anderson Seafoods, we knew we wanted to make a winter dish with them. Something comforting but at the same time spiced and rich, full of flavor. And that’s how this recipe was born!

Another staple in our home are good spices and with the launch of my friend Heather’s company, SavorX, it’s been a dream to stock up on fresh spices. For this recipe, we used curry and turmeric powder, which not only had great flavor but a gorgeous color. Since I had supported her Kickstarter project, my reward was a Spiceologist Block which is now one of my favorite kitchen items. It honestly makes me feel like a mad scientist when I’m sprinkling spices out of a test tube, which is pretty cool.

A quick sauté of onions, garlic, and ginger; a splash of coconut milk and half & half; and the final addition of spices and crab claws and you’ve got a perfect winter meal. Serve alongside long grain rice or your favorite whole grain like quinoa, which help soak up the delicious curried liquid. Since this a quick meal, don’t be stuck inside what this recipe says! Don’t have onions at home? Throw some carrots or peppers in the mix! No half & half? Splash in a little milk! Recipes are there to guide you, not stop you from making them because you’re missing an ingredient. But you should definitely have curry powder and crab claws for this recipe. Other than that, adapt as you see fit!

Crab Claws in Curry Sauce

Quick & flavorful curry sauce for crab claws, perfect for weeknight meals!

Ingredients

  • 10-12 snow crab claws thawed
  • 1 tablespoon unsalted butter
  • ½ large yellow onion thinly sliced
  • 1 garlic glove minced
  • 1 teaspoon minced fresh ginger
  • ½ cup half and half
  • ½ cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • salt to taste
  • fresh parsley to taste

Instructions

  • In a medium sauce pot, melt the butter and sauté the onions, garlic, and ginger.
  • Once translucent, add the half & half, coconut milk, and spices. Simmer for 10 minutes until sauce thickens a little. Taste and season.
  • Add crab claws and warm through for 5 more minutes. Serve immediately with fresh herbs.
