Blueberry Cobbler Cheddar French Toast

Last week, we shared a savory recipe for a unique grilled cheese sandwich: Habanero Jack Grilled Cheese with Pears & Prosciutto has become a sensation overnight! The combination of crisp pears and silky prosciutto paired so well with the spicy cheese that a few readers have emailed me telling me how they are loving this creation. Today, thanks to Great Midwest once again, we’re sharing a sweet grilled cheese recipe using their Blueberry Cobbler Cheddar and have a HUGE giveaway for one cheese lover!

When we think of grilled cheese sandwiches, we tend to always think about the savory versions; the salty, melty sandwiches that we can dip in our tomato soup. But how about the sweet ones? The inspiration for this take on a grilled cheese/French Toast was the Great Midwest Blueberry Cobbler Cheddar cheese, packed with sweet blueberries surrounded by the salty cheddar cheese, it was the perfect accent to this recipe.

Blueberry Cobbler Cheddar French Toast

Prep Time: 15 minutes

Cook Time: 5 minutes

Yield: 2 servings

Serving Size: 1 sandwich

A unique twist combining our love for French Toast and Grilled Cheese Sandwiches!

Ingredients

  • 2 large eggs
  • 1 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 4 slices of your favorite sandwich bread
  • 8 large slices Blueberry Cobbler Cheddar Cheese
  • 2 tablespoons unsalted butter
  • 1/2 cup Wild Blueberries
  • 1/4 cup Vermont Maple Syrup

Instructions

  1. Whisk together the eggs, heavy cream, cinnamon, sugar, and vanilla. Set aside and prepare sandwiches.
  2. Put together sandwiches with just bread and cheddar cheese. Cut the crusts off.
  3. Heat a skillet with butter and gently dip the sandwiches in the French toast batter. Make sure to coat both sides. Drop into hot skillet and let sear on both sides. Keep warm in the oven until it is time to serve.
  4. To serve, simmer Wild Blueberries and maple syrup in a saucepan for 15 minutes until reduced. Drizzle over warm French toast and enjoy!

    It is so hard to name a single favorite cheese since there are so many varieties and so many different situations where the best cheese isn’t always the same! If I had to pick one though I think it’d be sharp cheddar though I guess.

    My favorite cheese is the one I’m eating at the moment. I really can’t think of one I’ve tried that I don’t like. For an all-around cheese, maybe something in the cheddar family.

    I use to be able to get a Sticky Toffee Pudding cheese in Napa Valley but the store cant get it anymore. That was my favorite all time cheese in the world an now it’s gone.

    Trader Joe’s makes this fabulous cheese that I could eat a whole log of in one sitting – Blueberry Goat Cheese! It is fantastic. They have a cranberry one that I think is season as well.
