Pork Sliders with Pickled Onions

Recipe? What’s that? Seriously now, our dinners are typically just things we throw together with the bare sense of “Oh this would taste good with that”, “Oh let’s pickle this and add to some smashed of that”. We’re cooks by nature and when cooking, we tend to cook by taste and sight. So when we received the new Alexia Artisan Sweet Potato Rolls, that’s just what we did. All we really knew is that we wanted sliders!

We had some pork tenderloin, an avocado, half a red onion, and a squirt of Sriracha left. Here’s what we did:

  • Whisk equal parts Sriracha and mayonnaise;
  • Thinly slice the red onion and throw in a jar. Cover with your vinegar of choice & soak for an hour;
  • Slice the pork tenderloin, season with salt and pepper, and sear on both sides over high heat;
  • Mash the avocado, drizzle in some olive oil, and season with salt.

Alexia Sweet Potato Rolls

These Artisan Sweet Potato Rolls are amazing and I’m not just saying that. Seriously, I ate an entire bag in a day. I’m so ashamed, but they’re just that good. Soft with a tender crumb, sweet from the potatoes and just the right size. Throw a pat of butter in a warm bun and you’re good to know.

    Our family is vegetarian so when we have sliders it usually garlic marinated portobello mushrooms, sauteed onions and peppers and some kind of yummy cheese like mozzarella or provolone….very yummy
