Welcome back to another Virtual Potluck! What’s a Virtual Potluck you ask? Well, you can read more about it here – but simply, it’s a group of food bloggers that come together every month to showcase everything and anything food. National food holidays, new culinary products, ingredients we love cooking with, and food companies that we discover; all this and more – we’ve got it covered!

Today we’re all sharing one of the best football watching snacks of all times – guacamole! Wikipedia defines guacamole as “an avocado-based sauce that originated with the Aztecs in Mexico”. Traditionally mashed in a mortar and pestle and seasoned with sea salt & lime, it’s transitioned to become one of the most popular condiments in the world. And that’s a good thing, since avocados are so damn healthy! It boasts 20 essential nutrients like fiber, potassium, Vitamin E, and folic acid. It’s got ZERO cholesterol and composed mostly of unsaturated fats. And whenever I can eat fats and they’re GOOD for me – bring it on!

And since it’s the middle of winter and citrus fruit are in season, I wanted to share a recipe for a Winter Guacamole that showcases the best of both worlds: Avocados, Meyer Lemons, & Ruby Red Grapefruit. Oh and Cilantro – lots and lots of fresh cilantro makes the world a happy place.
