#VirtualPotluck – Winter Citrus Guacamole

Today we’re all sharing one of the best football watching snacks of all times – guacamole! Wikipedia defines guacamole as “an avocado-based sauce that originated with the Aztecs in Mexico”. Traditionally mashed in a mortar and pestle and seasoned with sea salt & lime, it’s transitioned to become one of the most popular condiments in the world. And that’s a good thing, since avocados are so damn healthy! It boasts 20 essential nutrients like fiber, potassium, Vitamin E, and folic acid. It’s got ZERO cholesterol and composed mostly of unsaturated fats. And whenever I can eat fats and they’re GOOD for me – bring it on!

And since it’s the middle of winter and citrus fruit are in season, I wanted to share a recipe for a Winter Guacamole that showcases the best of both worlds: Avocados, Meyer Lemons, & Ruby Red Grapefruit. Oh and Cilantro – lots and lots of fresh cilantro makes the world a happy place.

Winter Citrus Guacamole

Prep Time: 10 minutes

A fun way to use winter citrus in your favorite avocado recipe!

Ingredients

  • 2 medium California avocados, skinned + pitted (save the skins!)
  • 1/2 Ruby Red grapefruit
  • 1/2 Meyer Lemon
  • 2 tablespoons olive oil
  • 1 teaspoon apple cider vinegar
  • to taste: salt, pepper, and cilantro
  • orange zest sprinkle

Instructions

  1. Using a fork, mash the avocados to your desired consistency. Squeeze both citrus juices to taste, olive oil, and the splash of vinegar.
  2. Season with salt, pepper, and fold in fresh cilantro leaves. Serve in the avocado skins, top with grapefruit segments and enjoy with fresh bread, chips, or slathered on your favorite sandwich!
