Passion Fruit & Guava Meringue Pie

So here’s the thing – I entered this recipe over at the Attune Foods Recipe Contest in the Pie category and as I type this, I’m crossing my fingers and toes that tomorrow (actually today since I’m posting this tomorrow!) I’m a winner. SO if you want to say a quick early morning prayer for my pie and I, please do. And if I don’t win, at least I had pie right?
This pie was inspired by my travels to the Dominican Republic, where you can get passion fruit in all shapes and sizes: fresh, dried, juice, concentrate, puree. In this recipe I used the concentrate, but you can certainly use puree which is easier to find in the US. One of my favorite companies for fruit purees is Perfect Puree, check them out. Actually, I’m so addicted to passion fruit I’ve had friends send it in the mail – I know, so illegal but hey, that’s what friend’s are for!

Crumbly crust layered with sweet guava jam, tart passion fruit curd, and a fluffy meringue – the components to a delicious ending to any meal. You can use whatever jam is your current favorite but I decided to keep the tropical theme all throughout. Easy as pie!

Passion Fruit & Guava Meringue Pie

Yield: Serves 6

Passion Fruit & Guava Meringue Pie

Ingredients

    Crust:
  • 1 sleeve Erewhow Honey Graham Crackers
  • 1 stick butter, melted and cooled
  • Filling:
  • 1 large can condensed milk
  • 1 large lime, juiced and zested
  • 6 ounces passion fruit concentrate
  • 4 large yolks
  • pinch of salt
  • 1/4 cup guava jam
  • Italian Meringue:
  • 4 large whites
  • 1 cup granulated sugar plus 4 teaspoons
  • 1/3 cup water
  • 1 tablespoon powdered sugar
  • 1/8 teaspoon five spice powder

Instructions

  1. Heat oven to 350F. Grease a 9 inch pie or tart pan with butter and reserve.
  2. Pulverize graham crackers and toss with melted stick of butter. (Texture looks and feels like wet sand).
  3. Press cracker crumbs into pan and up the sides. Bake for 15 minutes until golden brown. Cool.
  4. Spread bottom of pan with guava jam. Refrigerate for 15 minutes.
  5. To make filling, whisk by hand condensed milk, passion fruit concentrate, lime juice and zest, salt and egg yolks.
  6. Pour into pan and bake for 35-40 minutes at 300F, until center is set.
  7. Cool overnight or at least 4 hours.
  8. To make meringue: cook 1 cup sugar and water until syrup consistency. Whisk whites and five spice powder until soft peak and slowly add syrup. Add the rest of the sugar and whisk until stiff peaks.
  9. Decorate pie with meringue, sprinkling with extra five spice powder. Serve chilled.

    Oooooh I love this guava pie! I love these flavors! You are making me just die from drooling. Must make this. BTW, I left a comment on the post above for the guacamole treat and now I don’t know if it kicked in or not. Thanks for sharing this passion fruit-guava pie, Nelly!

    I am not a fan of pies in general but key lime I like and here you created one with flavors I will go gaga over! Passion fruit and guava?! Girl, you speak my language. Still no bacon though! :)
