Ever make something for the first time and they totally turn out perfect? Yeah, this never happens to me….until I made these Whoopie Pies from Green & Black’s latest cookbook, “Ultimate Chocolate Recipes – The New Collection”. Well, perfect in my book. Sure the tops aren’t as smooth as a normal whoopie pie, but they are crackly, as if like a whoopie pie had an affair with a brownie! Flavored with GREEN & BLACK’S Mayan Gold, the dark chocolate pairs wonderfully the citrus. Wanting to have a more rounded citrus flavor, the buttercream that’s tucked inside the two pies is also laced with orange extract, making the Mayan Gold Chocolate I used, even happier.

Now, about the book. “Ultimate Chocolate Recipes – The New Collection” from GREEN & BLACK’S is a gorgeous and compact hardcover book that translates beautifully into your kitchen. It’s a collaboration of chefs, authors, publishers, and fans, that have all come together to share their best recipes using chocolate. Rose Levy Beranbaum has a Chocolate Layer Cake on page 60 that I am dying to try; Nick Malgieri has another cake in the book, a Chocolate Bourbon Cake that sounds fantastic. And the way it’s divided, makes it easy to narrow down what you’re in the mood for; everything from Teatime to Tortes, with Ice Creams and Desserts. The cherry on top? Detailed and beautiful photography done by Jenny Zarins.

Anita's Wonderful Whoopie Pies

Ingredients

  • For the pies
  • 9 tablespoons butter
  • 5 ½ ounces dark 70% cocoa solids chocolate, (Green & Black's Mayan Gold)
  • 1 cup plus 2 tablespoons sugar
  • 3 extra large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 tablespoons cocoa powder
  • ½ teaspoon baking powder
  • For the filling
  • 3 ½ tablespoons unsalted butter
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract orange extract
  • 2 cups confectioner's sugar
  • Toasted Nuts or Coconut

Instructions

  • Preheat the oven to 350F and line baking sheets with parchment.
  • Melt butter and chocolate in a double boiler and cool.
  • Whisk sugar, eggs, and vanilla until light and fluffy. Fold in chocolate/butter mixture.
  • Sift flour, cocoa, and baking powder and fold into above mixture.
  • Place tablespoons on to baking sheets and bake 10-12 minutes. Cool.
  • For icing, cream all the ingredients together.
  • Fill whoopie pies with icing and cover sides with toasted nuts or coconut.
