Chorizo stuffed poblano peppers make a delicious and flavorful appetizer or dinner. The peppers are stuffed with a mixture of Idaho® Spuds™, grilled chorizo, black beans, corn, and fresh herbs. They make a complete meal for your friends or family.
This post was written in partnership with Idaho Spuds. I was compensated for the creation of this recipe.
Recently, I was hired to develop a few summer recipes for Idaho Spuds, including this recipe for stuffed poblano peppers. The not-so-mystery ingredient in this dinner is mashed potatoes in the batter!

AND I need to make your delicious recipe!!! I love stuffed peppers, my mom always made a simple recipe though. I love your recipe, and the addition of chorizo would be fantastic! Hugs, Terra
Oh gosh, I have a similar recipe to post that sounds remarkably like this one (not exactly the same, you’ll see). Great minds think alike and all that. I am not a big potato person, but I love things stuffed with potatoes. And I love spicy things. And cheese… can I come over for dinner?
OMG @Nella22 I love these! Will you pleaassseee send me a care package 😉
