Cashew-Coffee Bread Pudding & Artisana Nut Butter Giveaway

Welcome to the Virtual Potluck’s latest party! Our special guest for this party is Artisana, a company that creates raw and organic nut butters, as well as some delicious roasted butters and great coconut oils and butters.

Artisana focuses on creating nut butters by preserving their full health benefits and flavor. They are made in a temperature controlled room, where the best nuts are processed to make the butters. What distinguishes them is not only their quality, but their variety of butters that include everything from Macadamia to Walnut, and beyond! Oh, and did I mention that the nuts used are sourced 100% organic and raw? The temperature control rooms make it so the nut butters are blended carefully and never go over certain temperatures. They also don’t add anything extra to the butters; no oils, salt, flavorings, or preservatives are added, making it a fantastic product when you’re wanting to take care of your health.  Cashew-Coffee Bread Pudding
Makes 3 small ramekins

Cashew-Coffee Bread Pudding & Artisana Nut Butter Giveaway

Ingredients

  • 1 large egg
  • 1/2 cup whole milk
  • 1/2 teaspoon coffee extract
  • 2 tablespoons Artisana Raw Cashew Butter
  • 3 tablespoons granulated sugar
  • pinch of salt
  • 1/2 teaspoon baking powder
  • 1 cup fresh bread crumbs
  • 1 tablespoon fine coffee grounds*
  • Cashew Butter Glaze
  • 2 tablespoons Artisana Raw Cashew Butter
  • 2 tablespoons hot water
  • 4 tablespoons confectioner's sugar

Instructions

  1. Preheat oven to 350F. Grease ramekins and set aside.
  2. Whisk together egg, milk, cashew butter, sugar, and salt.
  3. Toss bread crumbs with coffee grounds. Add baking powder.
  4. Add coffee bread crumbs to wet ingredients and absorb the custard for 5 minutes.
  5. Pour into ramekins and bake for 25-30 minutes.
  6. In the meantime, make glaze by whisking together cashew butter, water, and sugar. Serve while warm, and drizzle glaze over it. Serve a side of the glaze if needed!

*Note: You can either add finely ground coffee to the bread crumbs, or do as I did and throw some bread chunks into your coffee grinder. Not only will you end up with coffee scented bread crumbs, but your coffee grinder will be clean! See this post on Facebook for the how-to picture.

    ohgoodgolly cashews are my weakness so I definitely would love to try their Organic Raw Cashew Butter.
    ..I must admit though, I’m thoroughly intrigued by the Sattva Cashew Butter, so that one would follow very closely after the Raw Cashew Butter! 😉

    Your bread pudding looks pretty darn good. I don’t drink coffee but I love the flavor. I have started using espresso powder in my brownies and cookies, oh what a difference it makes.
