When a little bird told me Marx Foods was hosting a Blogger Morel Recipe Challenge, I rapidly emailed them declaring my endless love for the mushrooms. Well, not really, but you get my drift. We were all to create a recipe with dried morels, in anticipation for fresh morels.
Wanting to create something special, with a variety of flavors that not only showcased the earthiness of the morels, but would be a burst of emotions on your tongue. This is where Cuban Pastelillos come in. While growing up, we spent a few years of my early childhood living in Miami, Florida. And you know what that means? Cuban bakeries everywhere! Soon, our favorite afternoon treat became the Guava and Cream Cheese Pastelillos these bakeries sold: sweet flaky pastries filled with guava paste and cream cheese, they were heaven to my brother and I.
You might be wondering, where can you get guava paste? Most supermarkets have it in the baking aisle, and if not, the Latin section. It looks like quince paste, sold in cans or rectangular logs. It’s great as a glaze when melted and as a great addition to cheese platters. But today, it has become one with morels. Rehydrated mored are folded into cream cheese with some added spice and topped with guava. The results are sweet, savory, umami, flaky heaven. Give these a try at your next dinner party as a passed appetizer or make them for brunch; your guests will sure love them!

Ingredients
- 1 box puff pastry sheets thawed
- dried morel steeped in 1 cup boiling water for 30 minutes
- 8 ounces full fat cream cheese 1 package
- 1 tablespoon Sriracha
- 1 teaspoon Ground Chili Paste
- guava paste cut into squares
- salt & pepper to taste
- 1 egg whisked
Instructions
- Preheat oven to 350F and grease a baking tray with oil.
- Using a strainer, press morels to remove as much water as possible. Save this water for later use in stocks, soups, and sauces.
- Finely dice morels and reserve.
- In a small, microwave safe bowl, warm cheese cheese for 30 seconds. Fold in chopped morels, Sriracha, ground Chili Paste, and season with salt & pepper.
- Fold out puff pastry sheet and cut into squares, rectangles or triangles (like the crescent rolls that come in a can). Place a dollop of morel cream and top with a guava paste square.
- Brush the sides with egg wash and fold or roll into shape. Brush the tops again with egg wash and place in baking sheet.
- Bake for 20-25 minutes, until flaky and golden brown.
Disclaimer: Marx Foods provided all contestants with a sample of their dried morels free of charge. Opinions, as always, are based on personal testing and tasting. This is an entry to the Morel Recipe Challenge, so wish me luck!
