Kale-chorizo soup proves that we’re finally on the kale bandwagon! Everywhere you look, there are kale beverages, kale soups, and kale casseroles… bloggers are making everything with kale! Over at the Murrays, we wanted to keep it kale simple, so we made kale-chorizo soup, a fantastic winter comfort food!

The fantastic thing about making a pot of soup is that you won’t have to cook much for the next few days. A large pot of this kale-chorizo soup lasted us 5 days, and each day, we made a variation of it, serving it with different sides.
First we had the soup on its own, with a slice of crusty bread. The next day, we topped it with quinoa and mozzarella. Third day, it was served with a side of wild rice. And so on…until the pot dwindled down to a few drops.

Ingredients needed to make kale-chorizo soup:

2 tablespoons olive oil
2 chorizo links, diced
1 medium white onion, diced
4 celery stalks, diced
2 medium carrots, peeled and diced
3 medium cloves garlic, minced
1 large bunch fresh kale, stems removed, chopped
2 quarts water
28 ounce can diced tomatoes
11 ounces V8 juice (or your favorite tomato juice)
to taste: salt, black pepper, cayenne pepper, cumin

Instructions

In a large pot over medium high heat, warm olive oil and sear chorizo until fat is rendered. Do not remove the fat, as this will add flavor to the end result. Cook for 3-4 minutes and add onion, celery, carrots and garlic.

Sweat the vegetables until translucent, then add chopped kale, tossing with all ingredients. Reduce heat to medium low and allow kale to cook.

Add water, diced tomatoes, tomato juice and simmer for one hour. Taste and season during cooking. Re-season before serving if needed.

Serve topped with cooked quinoa and shredded mozzarella.

  6. wow nelly, i love the flavors here. chorizo adds such great flavor for the meat and you know how much i love quinoa and kale. i’ve never heard of kale brownies, or at least not yet. hehehe. have u tried kale chips yet? they are so easy and fun to eat. 🙂

  8. I love kale! My girls surprised me a few days ago (pleasantly:) when they asked for kale chips for their after-school snack! Even my husband and very skeptical meat-loving 20-yr-old daughter liked them! Yay!
    I use all my greens interchangeably, depending on what’s in season and available, and soups are at the top of the list.
    You are so right, a big pot of soup can have several uses and always be different.
