Welcome to the 2nd day of Cooking with Book’s Giveaway Week! We’re all familiar with Trader Joe’s and how a trip to one makes you feel like you’re traveling around the world; French cheeses, Italian wines, Japanese seasonings and cookies from around the world. This is what “The I Love Trader Joe’s Around the World Cookbook is all about! It brings you dishes from the furthest corners of the world to your family table with simple ingredients that can be found at your local TJ’s or grocery store.

Since the temperatures in New England have dropped lately, the cooler weathers have me making soups and more soups, so this Hot & Sour Shrimp Soup is the perfectly brothy liquid, filled with great flavors. The jalapeno and fresh cilantro adds that freshness you need in cold, winter nights. The best part? The preparation takes about 5 minutes and a quick simmer to combine the flavors of about 10 minutes is all it takes! If you want more complex flavors in this soup, do as I did by peeling your shrimp and saute peels in olive oil. Add fresh chopped ginger and cook for 5 minutes over high heat and then reduce and simmer for 20 minutes, until reduced a little. Strain and continue recipe as directed below.

Hot and Sour Shrimp Soup

Serves: 4
Prep Time: 5 minutes
Cooking Time: 15 minutes
⅓ cup seasoned rice vinegar
4 cups vegetable broth
2 tablespoons soy sauce
2 tablespoons brown sugar
2 (2-inch) pieces fresh ginger
1 or 2 jalapeño chiles, sliced into rings
6 green onions, sliced
½ pound frozen uncooked shrimp, thawed, peeled, and deveined
handful of fresh cilantro, coarsely chopped
In a medium saucepan, combine the rice vinegar, vegetable broth, soy sauce, brown sugar, ginger, jalapeños, and green onions. Bring to a boil over high heat. Lower the heat to medium, and simmer for 5 minutes. Remove the ginger, add the shrimp, and simmer until just pink and opaque, about 4 minutes. Add the cilantro and adjust the seasoning with more soy sauce if desired.
