What’s better than sending three food bloggers cookies in the mail? Bacon. Duh. But seriously, sending things via snail mail is probably one of my favorite things in the world (after bacon.) What’s better than SENDING them? RECEIVING them!! Thanks to Cafeterra for the delicious everything and to A Recipe Junkie for the Butter “Crack” Cookies! But more of that in a moment, here’s a run through of how I packaged these Chocolate Chocolate Chippers and then the recipe adapted from The Treats Truck Cookbook! A huge shout out to Lindsay from Love & Olive Oil and to Julie from The Little Kitchen for making this event so successful and delicious!
Chocolate Chocolate Chippers
Adapted from The Treats Truck Cookbook by Kim Ima
Makes about 40 cookies
Ingredients
2 cups flour
1 cup natural cocoa powder
1 1/2 cup granulated sugar
3/8 teaspoon baking soda (what’s 3/8th? Whatever you want!)
1/2 teaspoon salt
2 sticks butter, cubed and softened
5 tablespoons milk
1 1/2 teaspoons vanilla extract
1 cup milk chocolate chips
Method
- Preheat oven to 350F and spray a cookie sheet with some Pam or cover in parchment.
- Combine all your dry ingredients. Toss with milk chocolate chips.
- Add the butter, milk and vanilla until a dough forms.
- Rest for 30 minutes. (You can also bake them right away, they just spread less when rested.)
- Roll into small balls, pat down and bake until cookies are still soft, but set. Enjoy!
I saw your post over on Shulie’s site of Food Wanderings where cookies were being discussed and we were all chiming in http://bit.ly/v4NmsV thanks to a Tweet from a fellow RD colleague of mine, Rebecca of Chow & Chatter http://rebeccasubbiah.com/ (Rebecca loves to Tweet great info!)
First off, let me send belated Warm Congrats on your engagement and now wedding–fun photos and looks like a wonderful time was had by all! Martha’s Vineyard is amazing, that is for sure–a wonderful spot for such a special occasion in your life. I went to college in New England and have many fond memories of the area. The weather was actually much warmer in November here in the NorthEast than it often is, so your timing for being at Martha’s Vineyard was great!
Next, on the subject of cookies, I was just wondering–have you ever professionally made gluten-free cookies?
(I noticed you suggest a book from a CIA chef and I hope to look into that to learn more about his perspective).
Since I just happen to be fortunate enough to be able to use more wheat and related flours containing the proteins that make up gluten in my baking, it is rare that I work with the alternatives.
So although I am familiar with the principles of using alternative flours/nut flours that happen to be gluten-free from my background of having taught collegiate Food Science, I haven’t had much personal experience working with them except here or there in lab classes and thought I would ask around among those who might have had professional gigs working with the gluten-free alternatives for their perspectives.
Up on my blog site is an overview piece on “Gluten-Free for the Holidays and Everyday” http://bit.ly/ryQke9 with hot links and I will go and add one for the CIA chef written book, but if you or your colleagues had any pointers to share, I would certainly be interested in those as well.
There is nothing like a wealth of experience when it comes to putting theory into practice!
TYIA for any and all thoughts on the subject and I’m glad to have found your blog site!
