Nothing says New England more than Clam Chowder! Like we’ve stated before, Sizzling Skillets is a cookbook with a wide range of flavors, so everything from Thai Curry to New England Clam Chowder, is present in the book! Visiting Martha’s Vineyard, fresh seafood is in every corner, every beach, every local market! Scallops, lobster, clams, oysters…Oh the oysters! “New England-Style Fish and Shellfish Chowder” is cooked in a slow cooker, but you can cook it in a large pot and just eyed the progress slowly. Traditionally, chowder is based on cooking potatoes, bacon, onion, garlic, celery and a few spices such as thyme and pepper. The liquid comes as clam stock and heavy cream, cooked down with the previous ingredients and the shellfish and fish is added at the end to keep it tender and not overcooked. I suggest adding the potatoes halfway through the simmering, as to not make them mushy. Potatoes in chowder should still have a bite to them! Emeril’s recipe is simple and easy to follow; use a white fish such as Cod or Halibut, so it keeps its texture and shape!

      So what would I cook for Emeril… oh geez the pressure is on! 🙂 I think I would be too nervous so I’d order take-out and pretend that I made it. 😉
