Can you believe this is the end of the second week of the One-Pot Blogger Cooking Party?! Time is flying by and as you know, it’s also my last day in Miami. Tomorrow I’m headed to Martha’s Vineyard, so this gorgeous quiche was the perfect recipe to cook for my bacon-loving family.

Emeril’s recipe is quite unique, since the crust is not a typical crust, but grated and baked potatoes! Pre-baking these potatoes in the bottom and sides of the pan allows for them to crisp up and become a vessel for the quiche mixture. Crisp base of potatoes topped with a creamy, savory Bacon and Leek custard create the perfect lunch dish. Serve with a side of local greens and you’re set!

Want to make this recipe your own? How about instead of regular potatoes, making a crust of grated Sweet Potatoes or even Purple Potatoes? Gorgeous colors and nutritional value are added, and remember you can add different ingredients to the custard filling as well. Due to the lack of a spring form pan, I used individual ramekins and another thing missing from Grandma’s kitchen? A box grater! What I did was shave the potatoes with a peeler and then ran a knife through it. It did the job and the made a delicious crust!
