Welcoming someone into your blog is like welcoming them into your home; it’s your special place where you can be yourself and hang out in pajamas all day if you want. This is why this guest post today is so special. It’s someone I have yet to meet, but she’s become an amazing support, a dear friend and an angel to me! She’s definitely someone I’d love to hang out all day in pajamas, baking up a storm and sipping on drinks!


Today I’m joined by the lovely Terra, from Cafe Terra Blog! She’s baking up a storm with one of my all-time favorite desserts, but I’ll let her tell you all about it! Welcome Terra!

I am so excited to be a part of Cooking with Books!!! I adore Nelly! To me, Nelly is someone I look up to, my mentor. She is such a lovely pastry chef, and I love growing and learning from her!

I decided to make something that combines a few of Nelly’s favorite foods. If we were to combine MOST of her favorite foods…..well the dish would be INTERESTING…. It would be something like a bacon, egg, banana, avocado, bacon fat bread pudding with homemade marshmallows on top! But that may not taste perfect….so how does just banana bread pudding sound instead?

I was inspired by Saucy Girl’s Kitchen warm banana bread pudding. Since I have not had much bread pudding, the thought of banana AND bread pudding together made me smile!

After making this recipe I realized I like bread pudding thicker. So you could use a smaller dish, or maybe double the recipe to get a thicker bread pudding. I also love cardamon, so you could easily add more. Chocolate is not my favorite….I know, I know….sooooo you probably will want to add more chocolate.

Chocolate Cardamon Banana Bread Pudding

Ingredients
3/4 cup of milk
1/4 cup sugar
1/4 cup brown sugar
2 eggs
2 tsp vanilla
1/2 tsp cardamon
5 – 6 cups French bread
1 large banana
handful of chocolate
1/4 cup chopped pecans

Method

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Butter a baking dish, set aside.
  3. In a bowl mix together milk, sugar, eggs, vanilla, and cardamon.
  4. Add bread to milk mixture; make sure the bread completely absorbs, wait about 1-2 minutes.
  5. Dice banana!
  6. Add banana, chocolate, pecans to bread mixture. Pour into buttered baking dish. Let cook covered for 30 minutes, uncover and continue cooking until puffed and golden brown. Enjoy!!!

  1. Bread Pudding was one of my Grandmother’s signature dishes and I loved it. I haven’t made it in foreever, though, so I may have to give this a shot since I love banana’s!! Great Post 🙂
