Jami Sorrento was our June Daring Cooks hostess and she chose to challenge us to celebrate the humble spud by making a delicious and healthy potato salad. The Daring Cooks Potato Salad Challenge was sponsored by the nice people at the United States Potato Board, who awarded prizes to the top 3 most creative and healthy potato salads. A medium-size (5.3 ounce) potato has 110 calories, no fat, no cholesterol, no sodium and includes nearly half your daily value of vitamin C and has more potassium than a banana!

After seeing a few friends doing the so called “Daring Kitchen” challenges, I decided to join the fun in June. Darling friends, nothing in this world is random and guess what the challenge was? To create a healthy version of my favorite dish of all time:

POTATO SALAD!

Spicy Tuna Potato Salad
Serves 4 as an appetizer or 2 as main course
Ingredients
3 large potatoes, peeled, cut in chunks
1 large carrot, peeled, diced
2 eggs, boiled 
1 can tuna in water, drained
2 tablespoons light mayonnaise
1 tablespoon Sriracha
1 tsp Turmeric
salt and pepper
olive oil
chopped green onions
Method
  1. Boil potatoes and carrots in salted water.
  2. In blender, place tuna, mayonnaise, sriracha, turmeric, and season to taste. Pulse to incorporate.
  3. Drain Potatoes and chop slightly. Pour tuna dressing over and fold together. Top with eggs and green onions. Sprinkle with turmeric and drizzle with olive oil
  4. Enjoy both warm or cooled! 

Healthy Notes:

  • Eggs, are awesome. Period.
  • Carrots, because they have beta-carotene, improve night vision. And honestly, how cool is that!?
  • Turmeric inhibits cancer cell growth and improves liver function!
  • Canned Tuna: Try to find the best tuna possible! Omega-3 fatty acids. Need I say more? (Anti-cancer fighting power!)

  1. I have never put carrots in my potato salad, but when “researching” for the bento challenge, I saw a Japanese lady put some in hers. Interesting!

    I love how simple this is–not too many ingredients, but I can tell it packs a Lot of flavor!

  5. Although I am allergic to seafood occasionally it is worth some Benadryl and feeling aweful to have a much loved single bite and this would fit into that catagory. I love potato salad and tuna so my family might just luck out so I can taste it. Looks wonderful!

  6. That sounds like so much fun! Fantastic! Love the fact that it’s healthy and bit spicy too! Sriracha! One of my absolute favorite condiments. I use it as an ingredient all the time too.
