These Beef Lettuce Wraps are so quick to put together and taste like your regular beef tacos, with half the calories! Plus, the fresh tomato salsa really makes it special.

Beef Lettuce Wraps recipe

This new year, per usual, I made resolutions. Oddly enough, they are still alive and well and it’s the end of January. And it’s because I didn’t make impossible resolutions, but things that were realistic enough for my every day life. One of them was cutting out most carbs – because my carb addiction is quite strong and it’s the one thing I am drawn to on a daily basis.

First up, I tackled beef tacos because they are one of my favorite foods. But sometimes the amount of tortillas I can consume in a sitting is outrageous, so Beef Lettuce Wraps to the rescue. To really focus on cutting out the calories on this dish – and mind you, calories have never been a part of my train of thought, but it’s important to understand what’s going into your body, I replaced the sour cream with the brand new Stonyfield Double Cream Plain Yogurt. Thick. Rich. Delicious. Double Cream is the ultimate cooking yogurt! Great as a substitute for oil, mayo, buttermilk, butter or sour cream in your favorite recipes.

Another substitute was the taco seasoning package people tend to use when seasoning ground beef. Step away from the preservative-filled package and replace with some delicious Simply Organic seasonings. A blend of their adobo, smoked paprika, and cumin made the beef sing with flavor. The combination of those three spices have just become my favorite and I’m so happy Stonyfield partnered up with them – it’s a match made in Beef Lettuce Wrap heaven!

Beef Lettuce Wraps

Beef Lettuce Wraps are a quick and flavorful lunch or dinner idea!

Ingredients

for the filling:

  • 1 pound ground beef
  • 1 tablespoon Simply Organic Adobo blend
  • 1 tablespoon Simply Organic cumin
  • 1 tablespoon Simply Organic smoked paprika
  • salt and pepper to taste

for the tomato salsa:

  • 2 large roma tomatoes chopped
  • ½ cup fresh cilantro chopped
  • ¼ white onion finely chopped
  • 2 tablespoons rice vinegar
  • salt and pepper to taste

to assemble wraps:

  • ½ cup Stonyfield Double Cream Plain Yogurt
  • ½ cup shredded cheese
  • ½ head of iceberg lettuce leaves separated

Instructions

  • Over high heat, sauce the beef with the spices and season with salt and pepper, cooking until brown and crispy.
  • While the beef cooks, mix the salsa ingredients together and season. Set aside.
  • To assemble wraps, place seasoned ground beef in lettuce cups and top with tomato salsa, cheese, and a drizzle of double cream yogurt (I like to place in plastic bag and pipe it out!).

    These look so good! And yes–I need more lettuce wraps in my life! I’ve been trying to cut down on extra bread, when possible. These Spiced Beef Lettuce Wraps are a great opportunity to do so!
