This tomato basil mozzarella salad is my ultimate summer salad – it’s fresh, simple, and bursting with flavor! Plus, it’s a meal if I just want something light and at the same time works great to bring to potlucks and summer outings.
It’s not that we get lazy during the summer, it’s actually the opposite. We just want to spend more time outside in the sun, soaking up that Vitamin D, than actually slaving away in a kitchen. That’s why easy and simple recipes like this Tomato Basil Mozzarella Salad have me loving summer more than usual.
Super simple because I can stop by my closest local farm and pick up every single ingredient I need for this recipe in under five minutes. An dif you’re like me, sometimes you don’t want to eat big heavy meals during the hot summer months and this salad really hits the spot: juicy tomatoes, creamy mozzarella, sweet balsamic glaze, and earthy olive oil – all excellent ingredients that when paired with herbs like the gorgeous basil, really shine.
If you don’t have balsamic glaze at home or can’t find it in your local stores, it’s pretty easy to make at home! In a small pan over high heat, whisk together 1 cup balsamic vinegar and 1/2 cup granulated sugar. Simmer until the sugar dissolves and the balsamic vinegar starts to reduce. Once it’s half gone, turn off and use as a glaze!
Now go enjoy summer by making this refreshing and easy tomato basil salad with mozzarella. Hope you get to relax by the beach, pool, or lake this season while noshing on something delicious!
