I used self-rising flour from King Arthur Flour because I’m addicted to it; honestly because I’m lazy at times and don’t to measure out leaving agents! - 2 cups self rising flour
- 3 tablespoons chia seeds
- ½ teaspoon salt
- ½ cup granulated sugar
- ½ cup dark brown sugar
- 2 large eggs
- ½ cup melted coconut oil
- 2 tablespoons sour cream
- 1 tablespoon vanilla extract
- 3 large ripe bananas, mashed
- ½ tablespoon cinnamon
- Preheat oven to 350F and grease a loaf pan.
- Whisk together the flour, chia seeds, and salt. Set aside.
- Whisk together sugars, eggs, oil, sour cream, vanilla, and cinnamon.
- Add wet ingredients to dry ingredients and mix until incorporate.
- Pour into loaf pan and bake for 50 minutes, or until fully baked.
