Whole grain salads are my go-to for meals when life is a bit too crazy. Especially during the holiday seasons, we need recipes and techniques to fall back on that are hearty, filling, and delicious!

Whenever I know that I am going to have an extra busy week, I make a couple of batches of whole grains. Farro, quinoa, and bulgur are the top three grains that I love working with and eating. Having them cooked and ready to go makes it easier to put quick whole grain meals together, like this Whole Grain Salad with Creamy Cashew Dressing. <–Click here for the recipe.
This whole grain salad is loaded with healthy ingredients like farro, chickpeas, and raw zucchini noodles (zoodles). Paired with a creamy home made cashew dressing that includes fresh mint, it’s just what you need in your work lunch box or on your weeknight dinner table!
One of the ingredients I use in this recipe is tahini. You can usually find tahini in the Asian food section at your local markets. Sesame King Tahini is the brand that I used.
