Whenever I’m at a party, I’m the one hovering around the kitchen, either helping put the final touches on the food or eating the food myself. But whenever the passed appetizers show up, my biggest pet peeve are appetizers that are difficult to eat. Those that need a fork and knife to get in your mouth or are so saucy that I’m staining my party dress not an hour into the affair? Not my favorite type of party appetizer. Thus, I introduce to you these Chorizo & Wine Stuffed Mushrooms, the perfect little bite for holiday parties!

Stuffed mushrooms are traditionally considered to be an Italian-American recipe, typically made with breadcrumbs, parmesan, and fresh herbs. They’re a one bite appetizer that your guests will love and that’s why I’ve made a twist on the classic version by stuffing these mushrooms with crisp bacon, flavorful chorizo, and a healthy splash of white cooking wine. When Holland House asked me to develop a holiday recipe for them using their wines, I instantly though of a holiday appetizer idea and how I’d incorporate wine into it.

The white cooking wine is slightly dry, with a crisp aroma and a bit comparable to a not so sweet Sauterne. Here are some quick & easy tips on how to incorporate wine into your cooking:

  • Include a splash in light cream sauces and cream soups
  • Great for simmering poultry
  • Use to balance spicy recipes
  • A natural choice with fish and seafood
  • For added flavor, use white cooking wine in place of 1/3 of the cooking liquid when making rice

Try your hand at making these stuffed mushrooms at your next holiday party or get together. They’re simple and easy, plus you can adapt this recipe to include any of your favorite herbs and spices. Don’t have chorizo? Double the bacon! Wanting more vegetables? Finely dice some carrots or celery and add them to the mix. But definitely don’t forget the white cooking wine – it’s essential for that party flavor! And don’t worry if you don’t consume alcohol – the alcohol content cooks away when you’re making the stuffing.

Chorizo & Wine Stuffed Mushrooms

These Chorizo, Bacon, & Wine Stuffed Mushrooms will become your family's favorite party appetizer during the holidays!

These Chorizo & Wine Stuffed Mushroom make the perfect party appetizer!

Ingredients

  • 2 small chorizo links with casing removed and finely chopped
  • 1 strip bacon finely chopped
  • 15-20 medium sized button mushrooms cleaned/washed
  • 1 small onion finely chopped
  • ½ small red bell pepper
  • ¼ cup white cooking wine
  • 4 ounces cream cheese softened
  • ¾ cup panko breadcrumbs
  • salt and pepper to taste

Instructions

  • Preheat oven to 450F.
  • Over medium high heat in a sauté pan, cook chorizo and bacon until crisp.
  • While chorizo and bacon cook, remove stems from mushrooms and place mushroom caps on greased baking sheet. Chop the mushroom stems, as well as the onion and bell pepper.
  • Once chorizo/bacon cooks, add chopped onion, pepper, and mushroom stems into the sauté pan, add the wine, and cook for about five minutes over medium heat.
  • Once everything is cooked, dump into food processor and pulse 4-6 times.* Fold in cream cheese and panko. Season to taste.
  • Using a teaspoon, stuff each mushroom cap. Place stuffed mushrooms in the oven for 15-20 minutes, until golden brown. Serve warm or room temperature.

Notes

*Note: If you chop the ingredients finely enough, you don't need to do this. But it does make stuffing the mushrooms easier, since the stuffing becomes more compact.
Servings: 15 -20 appetizers (serves 4-5 guests)
