What makes a good cookie? To me, a good cookie has to be chocolate. Hands down, I’m a total chocolate lover so where it’s chocolate chip, double chocolate, or chocolate dipped like these spritz cookies, chocolate has to be present. Milk, dark, or even white chocolate – I love them all.

Today, I’m sharing these Dark Chocolate Dipped Spiced Spritz Cookies. The dough is an odd recipe that I found in Fannie Farmer’s Cookbook, called “Norwegian Butter Cookies”. Don’t let the use of hard boiled egg yolks scare you – after some online research, I discovered on that these cookies are famous and people have been baking them for decades! A quick dip in melted chocolate and a sprinkle of cacao nibs, and you’ve got a cookie that looks like it took ages to make but are actually super simple! Made with the OXO Cookie Press, these cookies are a fun project to make with kids as well.

Dark Chocolate Dipped Spiced Spritz Cookies

These spritz cookies are delightful and perfect alongside your coffee or tea.

Ingredients

  • 2 egg yolks hard-boiled
  • 1 stick unsalted butter softened
  • ¼ cup granulated sugar
  • 1 cup unbleached all-purpose flour
  • 1 tablespoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • ½ cup dark chocolate chips
  • 2 tablespoons cacao nibs

Instructions

  • Preheat your oven to 350F. Line a baking tray with parchment paper.
  • Press the egg yolks through a fine-mesh strainer and in your mixer, cream the egg yolks, butter, and sugar until fully incorporated.
  • Add the flour, vanilla, and pumpkin pie spice, but do not over mix.
  • Using the OXO cookie press, press the cookies through onto baking tray and bake for 10-12 minutes. Let cool while you melt chocolate chips over a double boiler or in the microwave.
  • Once chocolate is melted and cookies are cool, dip half the cookies, place on newly lined baking tray and sprinkle with cacao nibs. Let set in the fridge for 10 minutes until chocolate hardens.
Servings: 2 dozen small cookies
