The first thing I wanted to pair with this Veggie Patch Classic Falafel was babaganoush, a classic dish originally from Egypt but recognized all over the Mediterreanean. Made with a base of grilled, charred, or roasted eggplant it is then blended with garlic, spices, and herbs to make a rich and luscious spread.
