Can’t wait. Can’t wait. Can’t wait! I can’t wait for summer and I want to shout it to the world! Slow down, you say. Enjoy Spring with it’s gorgeous flowers and cool breezes; take it one day at a time. But after this very mild winter, I am still aching for hot days and warm breezes. Call me crazy, but I was born and raised on a Caribbean island where the normal temperature was 80F, all day, every day. I miss the heat, the warm weather, the constantly chilled beverages, ice cream flavors, and for those of us over the age of 21, those summer beers taste better than any other season beer!

Thus, I bring you an Orange Panna Cotta with Sautéed Piña Colada. Doesn’t it just LOOK like summer?! The gorgeously bright pineapple and the stark white panna cotta are the perfect complement to each other. Although pure white, the panna cotta is laced with Wild Bean Orange Extract, a pure essence that infuses the cream in such an intense way that you’d think it’s pure orange juice! I definitely recommend this extract if you’re looking for full orange flavor without the added artificial mess. Panna Cotta was the perfect vessel for it, since it showcased the flavor and allowed for the bright citrus to shine. Summer Lovin’: Orange Panna Cotta with Sautéed Piña Colada

Ingredients

  • 1 cup whole milk
  • 1 tablespoon unflavored gelatin
  • 2 tablespoons condensed milk
  • 1 ½ cups heavy cream
  • 1 tablespoon orange extract

Instructions

  • In a small saucepan over low heat, heat milk and sprinkle gelatin.
  • Hydrate gelatin and whisk until it has melted.
  • Add condensed milk, heavy cream, and orange extract. Remove from heat and cool for 10 minutes.
  • Slowly pour into wine glasses and let set for 2-4 hours. Serve alongside sautéed pineapples (or grilled peaches!), caramel sauce, and/or sprinkled with toasted nuts/coconut.

The Fire Island Cookbook is the perfect book to cook from between Memorial Day and Labor Day. Each occasion creates an event all around the food, sharing recipes that cover all the bases from appetizers to dessert, and extra nibbles in between. The recipes read like poetry that your summer loves would read to you during the balmy nights (or maybe that’s Grease, the movie?), but you get the idea.
